Les 7 is a single-parcel field blend of all seven grape varieties permitted in Champagne, grown together in one plot at Chavot.

Laherte Frères farm in the Coteaux Sud d'Épernay, and this is the most distinctive wine in their range. Thierry Laherte planted the plot in 2003 to make use of the heirloom vines of Fromenteau — the local name for Pinot Gris — along with Arbanne and Petit Meslier that were already growing within the family's oldest parcels. Adding Chardonnay, Pinot Noir, Pinot Meunier and Pinot Blanc completed a co-planting of all seven permitted varieties. The grapes are harvested and pressed together and all fermentations are spontaneous. The wine is built on a perpetual reserve running back to 2005: each year the blend is roughly 60 per cent new-vintage wine with 40 per cent of that reserve, so this release spans the harvests from 2005 to 2021. The result is complex, fleshy and savoury.

Drinking now and good for another five to eight years. Serve at 8 to 10°C with roast poultry, mushroom risotto or hard cheese.
