Champagne Laherte Frères Les Beaudiers Rosé de Saignée is made entirely from old-vine Pinot Meunier in a single biodynamically farmed parcel at Chavot.

Les Beaudiers is a vineyard at Chavot in the Coteaux Sud d'Épernay, correctly spelt Les Baudiers; the first vintage carried a misprint on the label and the name stuck. The vines were planted in 1953, 1958 and 1965, on the lower slopes where hard limestone bedrock lies beneath a topsoil of silex and clay, with the occasional vine of Chardonnay, Pinot Noir and Fromenteau mixed in. It is a powerful site that ripens Meunier fully, so much so that Aurélien Laherte's father once made a still red wine from it. The fruit is destemmed and macerates on skins for 14 to 16 hours, then ferments naturally in old oak barrels and matures on lees in the same barrels for at least 12 months without malolactic conversion. After four years on lees in bottle it was disgorged by hand in December 2021 at 2 to 3 grams per litre.

Drink now or hold for several years, with duck, salmon or a plate of charcuterie. Serve at around 8 degrees.
