Description

Champagne Laherte Frères Les Beaudiers Rosé de Saignée is a rosé drawn entirely from old-vine Pinot Meunier by bleeding the vat.

Rosé de saignée is the older and less common way to make pink Champagne: instead of blending in a little red wine, the juice is left in contact with the skins and then bled off, taking colour and a good deal of structure with it. Laherte Frères, based at Chavot in the Coteaux Sud d'Épernay, uses the method for Les Beaudiers, a parcel of Pinot Meunier planted in the middle of the last century on clay over chalk. Aurélien Laherte macerates the fruit briefly, ferments with indigenous yeasts in a mix of tank and used barrel, and ages the wine on lees in bottle before disgorging with a low dosage. The result is a saignée with more grip and depth than most Champagne rosé.

Ready to drink and sturdy enough for the table rather than the aperitif hour. Serve at 8–10°C with duck, tuna or a plate of jamón.
