Description
Les Empreintes is Laherte Frères' vintage cuvée, a selection of five barrels each from the two finest terroirs the family owns at Chavot.
Chavot lies in the Côteaux Sud d'Épernay, a stretch of hillside south of the town that is less celebrated than the Côte des Blancs but where the Laherte family has farmed for seven generations. Aurélien Laherte describes this wine as the quintessence of the Chavot terroir. Half comes from old-vine Chardonnay in Les Chemins d'Épernay, planted in 1957 on clay over chalky subsoil, with about a third of that fruit the rare Chardonnay Muscaté; the other half is Pinot Noir from Les Rouges Maisons, planted in the late 1980s on a deep soil rich in clay, flint and schist. The two are vinified separately and raised entirely in old Burgundian barrels, including some second-hand casks from Le Montrachet at Domaine de la Romanée-Conti. Dosage is four grams per litre.
Ready now and worth holding another five to ten years. Serve at about 8°C with roast poultry, scallops or a hard aged cheese.
