Champagne Laherte Frères Les Empreintes is a vintage selection of five barrels from each of the family's two best plots in Chavot.

Aurélien Laherte calls this the quintessence of the Chavot terroir, the village in the Coteaux Sud d'Épernay where the family has farmed for six generations. The Chardonnay comes from Les Chemins d'Épernay, planted in 1957 on clay over chalky subsoil, with roughly a third of the fruit the rare Chardonnay-Muscaté. The Pinot Noir comes from Les Rouges Maisons, planted in the late 1980s on deep soil rich in clay, flint and schist. The two are vinified separately and raised in old Burgundy barrels, some of them second-hand casks from Le Montrachet at Domaine de la Romanée-Conti. Dosage was 4 g/L. The depth and texture come from the old vines and the clay, held in balance by the freshness of the site.

Drinking now and good for another five to eight years. Serve at about 8°C, in a white wine glass, with roast chicken, scallops or aged comté.
