Les Grandes Crayères is Laherte Frères' second blanc de blancs, drawn from the family's chalkiest parcels in the Côteaux Sud d'Épernay and bottled here in magnum.
Crayères means chalk pits, and the name points to what defines this wine. The parcels lie on a west-facing hillside at Chavot where Campanian chalk sits under barely twenty centimetres of topsoil, planted with massale selection vines now more than forty years old. The base wine is fermented with wild yeasts in old barrels of three to ten years and does not go through malolactic fermentation, which keeps the chiselled quality intact. It then rests thirty months on lees in bottle and a further nine months after disgorgement before release. Dosage is under four grams per litre and every bottle is disgorged by hand. The style is savoury, spicy and mineral rather than fruit-forward, with poise and brightness in place of weight.
Drinking now and set to develop over the next decade, particularly in this format. Serve at about 8°C with oysters, grilled crayfish or a soft goat's cheese.
