Champagne Laherte Frères Les Grandes Crayères is a single-site Blanc de Blancs from Campanian chalk in the Coteaux Sud d'Épernay.

Laherte Frères farm in Chavot and the surrounding villages south of Épernay, and Aurélien Laherte has built the range around individual parcels rather than blends. Les Grandes Crayères is his second Blanc de Blancs after the Brut Nature, and it comes from the two chalkiest, most mineral sites in his holdings — crayères means chalk pit. The vines are massale selections of more than 40 years, planted on a west-facing hillside where Campanian chalk lies under just 20 centimetres of topsoil. The base wine was fermented with indigenous yeasts in old barrels of three to ten years and blocked from malolactic fermentation, which sharpens the wine's chiselled quality. It then spent 30 months on lees in bottle and a further nine months resting after hand disgorgement before release, with dosage below four grams per litre.

Ready now and capable of a decade in bottle. Serve at 8–10°C, ideally in a white wine glass, with oysters, grilled fish or a young Chaource.
