Champagne Laherte Frères Premier Cru Nature de Craie NV Base 18. Disg. June 2021

Nature de Craie is Laherte Frères' zero-sulphur Champagne, made from two barrels of Côte des Blancs Chardonnay.

Aurélien Laherte, who farms at Chavot in the Coteaux Sud d'Épernay, spent several vintages working towards a cuvée made without any sulphur additions, and in 2018 he arrived at a version he was happy to release. The juice was drawn from two premier cru terroirs in Vertus and Voipreux, at the southern end of the Côte des Blancs, where the chalk carries a little more clay. Laherte found that the keys to stability without additions were zero dosage and a full malolactic fermentation, both of which leave the wine chemically settled before bottling. This release is based on the 2018 harvest and was disgorged in June 2021.

Best drunk over the next few years while the wine is at its freshest; serve at about 8°C with oysters, ceviche or a plate of shellfish.
