Description
Ultradition is Laherte Frères' house Champagne, a Meunier-led blend from seven parcels across the Côteaux Sud d'Épernay and the Vallée de la Marne, in magnum.
The Laherte family has farmed at Chavot for seven generations, and Aurélien Laherte's holdings are spread across the Côteaux Sud d'Épernay and the Vallée de la Marne, at Chavot, Mancy, Morangis, Le Breuil, Boursault, Moussy and Vaudancourt. The vineyards are organically farmed with biodynamic methods, and the vines average thirty years. The blend is sixty per cent Pinot Meunier, thirty per cent Chardonnay and ten per cent Pinot Noir, with two reserve vintages accounting for forty per cent of the whole and sixty per cent of the material barrel-aged. Fermentation is natural and takes place in a mixture of vessels, including two fifty-hectolitre Rousseau tronconique casks, old barrels, foudre and concrete. Whatever the vessel, the wines stay on lees, and malolactic fermentation is partially completed, usually around sixty to seventy per cent. This shipment carries a new label by the artist Hanna Albrektson.
Ready now and good for another five years. Serve at about 8°C with charcuterie, fried chicken or a mushroom tart.
