Description
Champagne Laherte Frères Ultradition is a Meunier-led extra brut made from biodynamically grown fruit, offered here in magnum.
The blend is 60 per cent Meunier, 30 per cent Chardonnay and 10 per cent Pinot Noir, drawn from seven parcels across the Coteaux Sud d'Épernay and the Vallée de la Marne: Chavot, Mancy, Morangis, Le Breuil, Boursault, Moussy and Vaudancourt. Vines average 30 years. Two reserve vintages now go into the wine, making up 40 per cent of the blend, and 60 per cent of the material is barrel-aged. Aurélien Laherte ferments the juice naturally in a mix of vessels, including two 50-hectolitre Rousseau tronconique casks, old barrels, foudre and concrete. Whatever the vessel, the wines stay on lees, and malolactic conversion is allowed to run partway, generally 60 to 70 per cent. This bottling was disgorged with 4.5 g/L dosage.
Ready to drink and good for three or four years, longer in magnum. Serve at about 8°C as an aperitif, or with fried chicken, prawn cutlets or a mushroom tart.
