Champagne Laherte Frères Ultradition is the house's Meunier-led extra brut, offered here in magnum.

The Laherte family farms in the Coteaux Sud d'Épernay and the Vallée de la Marne, country where Meunier has always done the heavy lifting, and Ultradition draws on eight parcels across those two areas. The blend of 60 per cent Meunier, 30 per cent Chardonnay and 10 per cent Pinot Noir mirrors what is planted on the estate, and roughly 40 per cent of the wine now comes from reserve material held from the two preceding years. The juice ferments naturally in a mix of vessels, including two 50-hectolitre Rousseau tronconique casks, old barrels, foudre and concrete. The wines are always aged on lees, and malolactic conversion is allowed to run part of the way, generally 60 to 70 per cent. This bottling was disgorged with 4 g/L dosage.

Ready to drink and good for three or four years. Serve at about 8°C as an aperitif, or with prawn cutlets, roast chicken or a mushroom tart.
