Champagne Laherte Frères Ultradition in the 375ml half bottle is the house's Meunier-led blend from the Coteaux Sud d'Épernay.

Laherte Frères is a grower house at Chavot, south of Épernay, and Ultradition is its principal cuvée, built around Pinot Meunier with Chardonnay and Pinot Noir in support. Aurélien Laherte ferments the parcels separately, largely in used oak barrels and on indigenous yeasts, then blends in a sizeable share of reserve wine held in a perpetual solera-style blend — around forty per cent in this bottling, as stated on the label. The wine spends an extended period on lees in bottle and is disgorged with a low dosage, with the base year and the disgorgement date declared. The half bottle is filled from the same blend; because it ages faster than a full bottle, it is best drunk on the earlier side.

An easy format for two, or for one course. Serve at around 8°C with fried whitebait, roast chicken or salty hard cheese.
