Description
Champagne Laherte Frères Ultradition is made from organically and biodynamically farmed fruit across seven parcels in two districts.
Ultradition is the wine that introduces Laherte Frères, and it is drawn from fruit that is both organically and biodynamically reared. The varietal blend holds at sixty per cent Meunier, thirty per cent Chardonnay and ten per cent Pinot Noir, from seven parcels across the Coteaux Sud d'Épernay and the Vallée de la Marne: Chavot, Mancy, Morangis, Le Breuil, Boursault, Moussy and Vaudancourt. Average vine age is thirty years. Two reserve vintages now go into the assemblage, making up forty per cent of the blend, and around sixty per cent of the wine is barrel-aged material. Aurélien Laherte ferments the juice naturally across a mixture of vessels, including two fifty-hectolitre Rousseau tronconique casks, old barrels, foudre and concrete. Every lot ages on lees, with malolactic conversion partially completed at roughly sixty to seventy per cent, and dosage is 4.5 g/L.
Drinking well now and holding for a few years yet. Serve at around 8°C with charcuterie, roast chicken or a mushroom tart.
