Description
Ultradition is the Laherte Frères house Champagne, built on Pinot Meunier from seven parcels across the Côteaux Sud d'Épernay and the Vallée de la Marne.
Meunier is the most widely planted grape of the Marne valley and the least fashionable of the three Champagne varieties, which is part of what makes this wine interesting: it leads the blend rather than filling it out. The fruit is organically and biodynamically farmed and comes from Chavot, Mancy, Morangis, Le Breuil, Boursault, Moussy and Vaudancourt, with vines averaging thirty years. The blend is sixty per cent Pinot Meunier, thirty per cent Chardonnay and ten per cent Pinot Noir. Two reserve vintages make up forty per cent of the whole and sixty per cent of the material is barrel-aged. Aurélien Laherte ferments naturally in a mixture of vessels, including two fifty-hectolitre Rousseau tronconique casks, old barrels, foudre and concrete, always on lees, with malolactic fermentation partially completed. This bottling was disgorged at 4.5 grams per litre, an extra-brut dosage.
Ready to drink and good for another three to five years. Serve at about 8°C with charcuterie, roast chicken or salt-and-pepper squid.
