Description
Champagne Laherte Frères Ultradition is a biodynamically grown, Meunier-led extra brut, with sixty per cent of the blend raised in barrel.
Laherte Frères works out of Chavot in the Coteaux Sud d'Épernay, and Ultradition is the house's introduction, made throughout from biodynamically grown fruit. Seven parcels feed into it, spread across the Coteaux Sud d'Épernay and the Vallée de la Marne: Chavot, Mancy, Morangis, Le Breuil, Boursault, Moussy and Vaudancourt, with vines averaging thirty years of age. The varietal split holds at sixty per cent Meunier, thirty per cent Chardonnay and ten per cent Pinot Noir. Two reserve vintages are blended in, accounting for forty per cent of the assemblage, while around sixty per cent of the wine overall is barrel-aged material. Aurélien Laherte ferments naturally across a mixture of vessels, from two fifty-hectolitre Rousseau tronconique casks to old barrels, foudre and concrete, always ageing on lees, with partial malolactic conversion at roughly sixty to seventy per cent. Dosage is 4.5 g/L.
Drinking well now and good for a few years. Serve at around 8°C with charcuterie, fried chicken or a soft washed-rind cheese.
