Champagne Laherte Frères Ultradition is the cuvée that best shows why this Chavot family is associated with Meunier.

Ultradition is the entry point to the Laherte Frères range, drawn from eight different parcels across the Coteaux Sud d'Épernay and the Vallée de la Marne. The blend of sixty per cent Meunier, thirty per cent Chardonnay and ten per cent Pinot Noir is set in proportion to what the estate has planted, so it reflects the diversity of the holdings rather than a fixed recipe. About forty per cent of the wine these days is reserve material drawn from the two preceding vintages. The juice ferments naturally in a mixture of vessels: two fifty-hectolitre Rousseau tronconique casks, old barrels, foudre and concrete. Every lot is aged on lees, and malolactic conversion is partial, running at roughly sixty to seventy per cent. This bottling was disgorged with 4 g/L of dosage, which places it in the extra brut category, and, as with all the house's Champagnes, it was disgorged by hand.

Drinking well now and holding for a few years yet. Serve at around 8°C with oysters, roast chicken or a soft washed-rind cheese.
