Champagne Laherte Frères Ultradition is a Meunier-led extra brut drawn from eight parcels across two Champagne districts.
Aurélien Laherte farms a patchwork of small parcels around Chavot in the Coteaux Sud d'Épernay, and Ultradition is the wine that introduces the house. Eight parcels across the Coteaux Sud d'Épernay and the Vallée de la Marne go into it, and the blend of sixty per cent Meunier, thirty per cent Chardonnay and ten per cent Pinot Noir mirrors the estate's plantings rather than following any house formula. Roughly forty per cent of the wine is now reserve material from the two preceding harvests. Fermentation is natural and takes place across a range of vessels, including two fifty-hectolitre Rousseau tronconique casks, old barrels, foudre and concrete; whatever the vessel, every lot is aged on lees, and malolactic conversion runs to around sixty or seventy per cent. Dosage is 4.5 g/L, which places the bottling in extra brut territory.
Ready to drink now and good for a few years yet. Serve at around 8°C with charcuterie, fried chicken or a mushroom tart.
