Champagne Larmandier-Bernier Les Chemins d'Avize is a grand cru blanc de blancs drawn from two tiny plots in the heart of Avize.
The Larmandier family works two small parcels for this cuvée: Chemin de Plivot, planted in 1955, and Chemin de Flavigny, planted in 1960. Both are chalky sites with very little topsoil, lying on the lower slopes of Avize not far from the La Fosse vineyard farmed by Agrapart and Selosse. Avize is one of the reference villages of the Côte des Blancs, and this combination of thin soils and old vines gives a taut, saline style of Chardonnay. Winemaking follows the approach used for the other single-terroir wines, with spontaneous fermentation and no filtration, except that smaller neutral barrels are used because so little wine is made. The bottles age on lees for a minimum of five years and are then disgorged by hand with only 2 g/L dosage, giving a racy example of the village, deeper than Terre de Vertus yet more delicate than Vieille Vigne du Levant.
Approachable now and capable of developing over five to eight years; serve at 8°C with sashimi, scallops or a chicken and tarragon terrine.
