Champagne Mouzon Leroux L'Opiniâtre Blanc de Blancs is a zero-sulphur Verzy Chardonnay, a cuvée the domaine has now retired.

Opiniâtre translates as obstinate or very opinionated, and the name fits the wine's history. Sébastien Mouzon first made it in 2009 as his inaugural no-sulphur Champagne, at a time when very few growers were attempting one, in order to demonstrate that a Champagne made without sulphur could be both pure and capable of ageing. Since the estate now uses very little sulphur across the whole range, he has decided the cuvée no longer stands apart and has retired it. This release is entirely Verzy Chardonnay from vines on soils rich in clay, limestone and flint. It went through full malolactic fermentation, spent sixty-six months in oak, and was bottled with zero dosage before disgorgement in October 2021.

Ready now and holding well, it suits oysters, grilled turbot or a plate of hard cheese. Serve at 8°C.
