Champagne Mouzon Leroux Les Fervins Parcellaire is a single-plot Champagne made from all seven permitted varieties, planted row by row.

Les Fervins is one of the most highly regarded sites in Verzy, lying in the second, silex-rich valley close to the village. Sébastien Mouzon farms a small plot there containing every variety Champagne allows: Arbanne, Petit Meslier, Meunier, Chardonnay, Pinot Blanc, Pinot Gris and Pinot Noir, each planted row by row. The idea came from visits to Marcel Deiss in Alsace, a long-standing advocate of field blends that speak of place rather than variety. Planting in rows lets Mouzon pick everything on one day and take the same weight of each grape: if he has 300 kilograms of Petit Meslier and 600 of Chardonnay, he still presses 300 of each, keeping the proportions even. The wine is vinified in barrel, aged five years in four to five-year-old Louis Jadot casks, and bottled with zero dosage.

Ready now and built for the table, it suits roast poultry, mushroom risotto or aged cheese. Serve at 8°C.
