Champagne Mouzon Leroux Les Fervins Parcellaire 2018

Les Fervins Parcellaire is a single-vineyard Champagne from Mouzon-Leroux, a field blend of seven grape varieties historically permitted in Champagne - Chardonnay, Pinot Noir and Meunier alongside the rarer Pinot Blanc, Pinot Gris, Arbanne and Petit Meslier - grown together on the Fervins parcel within the Grand Cru village of Verzy.

Sébastien Mouzon has farmed the family's vineyards biodynamically since 2011 (Demeter certified), integrating trees and aromatic plants among the vines and relying on spontaneous fermentation with indigenous yeasts to let each individual parcel speak clearly. Les Fervins is one of the estate's most site-specific expressions, capturing the complexity that comes from co-planting heritage varieties in a single Grand Cru plot.

Complex and layered, with real textural interest, it's a Champagne built for the table - try it with roast chicken or aged cheese - served at around 10-12 degrees.
