Description

L'Opiniâtre is an Extra Brut Blanc de Blancs from Champagne Mouzon-Leroux, 100% Chardonnay grown around the Grand Cru village of Verzy and bottled with very little dosage to let the site's chalky minerality lead.

Ninth-generation grower Sébastien Mouzon has farmed the family's 8.5 hectares biodynamically since gaining Demeter certification in 2011, integrating over 1,300 trees and 750 aromatic plants among the vines and relying on spontaneous fermentation with indigenous yeasts throughout the cellar.

Taut and bone-dry with citrus and white flower character, it's a precise, food-friendly Champagne for shellfish or a simple fish course; serve at around 8-10 degrees.
