Description
Champagne Pascal Agrapart Minéral is a grand cru blanc de blancs blended from two old-vine plots straddling the border of Avize and Cramant.
Both plots are more than fifty years old and sit where the vine roots plunge straight into the chalky bedrock, which is the source of the cuvée's name and its character. The fruit from Le Champ Bouton in Avize fermented in tank, while the component from Les Bionnes in Cramant was vinified in 600-litre oak casks, a split that keeps the wine's citrus definition intact while adding a little breadth. The wine spent just over five years on lees and was dosed at 3 g/L. This is typically the saltiest and most mineral wine in the Agrapart range, and the quality across the estate is remarkably consistent, with variation coming from the season rather than the cellar. At present it shows compressed intensity, a core of citrus and chalky energy and a long, tapering, salty close.
Ready now and able to develop for several years; serve at 8°C with oysters, sashimi or a fresh goat's cheese.
