C + C is a grower blanc de blancs blended from the two Grand Cru villages that give it its name, Cramant and Chouilly.

The Côte des Blancs is Champagne's Chardonnay heartland, a south-east-facing escarpment below Épernay where thin topsoil sits over deep chalk. Suenen's Cramant and Chouilly parcels lie on north-west, west and south-east facing slopes with vines of around forty years, and their soils are deeper than those at Oiry, a silty clay over the chalk that adds flesh and breadth to the wine. Aurélien Suenen has run the house from Cramant since 2009 and farms organically without pursuing certification. The blend is fermented on native yeasts in a mixture of vessels, old Burgundian pièces, Stockinger barrels, oak foudres, cement eggs and enamelled tanks, with malolactic left to occur naturally; reserve wines from earlier years are used to round out the base. It is Chardonnay alone, with no Pinot Noir or Meunier, and is finished at extra brut so that the chalk is left uncovered.

Ready now and capable of holding for several years. Serve at about 8°C with oysters, sashimi or a plate of jamón.
