Champagne Suenen Grand Cru C + C Blanc de Blancs is blended from nine parcels split between the grand cru villages of Cramant and Chouilly.

Both villages sit on the Côte des Blancs, where Chardonnay is planted on shallow soil over deep chalk. Aurélien Suenen's plots include Les Robarts and Le Mont-Aigu, spread across north- and south-facing slopes, with the oldest vines dating from 1951. On Cramant's eastern flank the soil runs about a metre deep before the roots meet chalk; in Chouilly it is closer to 60 centimetres. The blend is 70 per cent Cramant and 30 per cent Chouilly, and Suenen has found the two work better together than apart, Cramant bringing textural finesse and Chouilly a more layered frame. The wine spent nine months on lees, half in enamelled tank and half in used Burgundy barrels and demi-muid, then 30 months in bottle with no fining, filtration or cold stabilisation. Dosage was 4 g/L.

Drinking well now and worth two or three years more. Serve at about 8°C with oysters, kingfish crudo or a simple roast chicken.
