Suenen's Oiry is a single-village blanc de blancs from the least celebrated of the Côte des Blancs Grand Crus, drawn from vines averaging around forty-five years old.

Oiry sits just north of Cramant at the top of the Côte des Blancs. Its topsoil is thinner and more limestone-dominant than that of its neighbours, which is why the wine reads as the brightest and most crystalline in the range rather than the broadest. Aurélien Suenen took over the family holdings in 2009 and farms about three hectares of Chardonnay across Cramant, Chouilly and Oiry, working organically without making much of certification. Vinification is split between old enamelled steel tanks and wood, the latter including Stockinger barrels, old Burgundian pièces, foudres and cement eggs; fermentation runs on native yeasts, malolactic is allowed to happen or not according to the year, and sulphur is used sparingly. The wine spends roughly two years on its lees under crown cap and is finished as an extra brut, with base year and disgorgement date given on the label in place of a vintage.

Ready to drink now and good for several years in a cold cellar. Serve at 8°C with oysters, sashimi or a plate of cured seafood.
