Champagne Taittinger Brut Réserve in magnum, the house's non-vintage blend built on an unusually high share of Chardonnay.
Champagne sits at the northern edge of viable viticulture in France, on chalk subsoil that holds water and reflects light back into the vines. Taittinger has been family-run in Reims since Pierre Taittinger acquired the business in 1932, with cellars in the chalk crayères beneath the city, dug by the Romans. Chardonnay makes up around forty per cent of this blend, well above the regional norm, with Pinot Noir and Meunier filling it out and three years or more on lees before disgorgement. Magnums age more slowly, with less oxygen per volume of wine.
Serve at 8 degrees as an aperitif, or with oysters, sushi or fried food. A magnum serves twelve.
