Description
Le Jardin d'Ulysse is Olivier Collin's first cuvée given over to a blend of varieties rather than a single one.
Collin works from Congy, in the Coteaux du Petit Morin south-west of the Côte des Blancs, and built the estate by taking back the family vines from the négociant lease they had been under. This wine comes from one parcel in the heart of Congy, immediately behind the house and winery, running north to south and co-planted to Chardonnay, Pinot Noir and Meunier rather than blended from separate plots. The first release is drawn entirely from the 2015 harvest. It spent five years on lees before being disgorged in March 2021 with a dosage of just 2.4 g/L, which leaves the wine dry and lets the site do the talking.
Drinking well now and capable of developing for several more years; serve at about 8°C with oysters, roast chicken or a plate of jamón.
