Champagne Ulysse Collin Les Pierrières is a single-vineyard blanc de blancs from a chalk site laced with jet-black flint, a soil almost unheard of in Champagne.

Les Pierrières is a 1.3-hectare parcel west of Congy in the Coteaux du Morin, near the southern tip of the Côte des Blancs and only 15 miles from Épernay. The site slopes east, and beneath just 10 to 40 centimetres of topsoil the vines reach soft chalk shot through with large chunks of silex; the estate credits that flint with the smoky cast the wine takes on. The vines are now around 40 years old, and this has been one of the producer's core wines since 2004. The current release is based on 2019 with 60 per cent reserve wine from 2018 drawn from the same vineyard. Fermentation is natural in neutral oak casks, the wine goes to bottle after 11 months, malolactic conversion is partial, and it is neither fined nor filtered. Disgorged February 2024 after 48 months on lees, with 1.7 g/L dosage.

Ready now but built to reward ten years or more in the cellar. Serve at around 8°C with oysters, sashimi or grilled king prawns.
