Champagne Vouette et Sorbée Blanc d’Argile is a Blanc de Blancs from the Côte des Bar, made from Chardonnay planted into uncleared ground on Kimmeridgian limestone.
The Côte des Bar, in the far south of Champagne, is overwhelmingly Pinot Noir country, so Bertrand Gautherot’s decision in 2000 to plant Chardonnay in the cold, west-facing lieu-dit of Biaunes was contrary at the time. He planted it wild, without preparing the soils and among the native vegetation, using massal-selection cuttings from Anselme Selosse in Avize and Vincent Dauvissat’s Valmur vineyard in Chablis. The Biaunes vines yield only 15 to 20 hl/ha, which accounts for much of the depth here. The cuvée now also draws on the Fonnet vineyard and on Vouette itself. Indigenous yeasts ferment the wine in used 500- and 600-litre barrels, with a small portion in Georgian amphorae, and it spends roughly 15 to 18 months on lees before being disgorged by hand with zero dosage.
Drinking well now and rewarding several years more. Serve at about 8°C with roast fish, poultry or a mushroom risotto.
