Champagne Vouette et Sorbée Extrait is a single-vintage cuvée drawn from the domaine's best Pinot Noir and Chardonnay barrels.
Bertrand Gautherot farms in Buxières-sur-Arce in the Côte des Bar, the southern end of Champagne where Kimmeridgian marl runs closer to Chablis than to the chalk of the Marne. Extrait takes its name from the French for extract, which describes the method: a barrel's worth of wine selected from a single harvest. The proportions follow whatever was picked that year, generally landing near 60 per cent Pinot Noir and 40 per cent Chardonnay, and the parcels are not fixed either, though the Chardonnay almost always comes from Biaunes and the Pinot Noir often from the Portlandian Sorbée vineyard. Gautherot selects by taste rather than by plan. The wine spends eight to nine years on lees and is disgorged by hand.
Drinking now and holding for years yet. Serve at about 8°C, not too cold, at the table with roast poultry, mushroom dishes or a mature cheese.
