Fidèle is Vouette et Sorbée's blanc de noirs, a zero-dosage Champagne of pure Pinot Noir grown on Kimmeridgian limestone, here in magnum.

Fidèle draws on several parcels in the Côte des Bar. The Fonnet vineyard, set in a small enclosed valley, forms the heart of the blend; Sorbée supplies much of the balance, topped up by Châtel, a rocky, limestone-rich site with vines of more than 20 years. Vine age across the cuvée averages around 30 years. Roughly 5% is reserve wine from a perpetual blend begun in 2001 and held in two large old foudres. The grapes are pressed in a traditional vertical Coquard press, then vinified with no added yeast and no chaptalisation in used Burgundy barrels from Domaine Arnaud Ente in Meursault for ten months. After the secondary fermentation the wine spends 15 to 20 months on lees in bottle and is disgorged with zero dosage. The magnum format slows the ageing further.

Ready to drink and well suited to the cellar in this size; serve at around 8°C with roast poultry, mushroom dishes or hard alpine cheese.
