Champagne Vouette et Sorbée Fidèle is a zero-dosage blanc de noirs made entirely from Pinot Noir grown on Kimmeridgian limestone in the Côte des Bar.
The Côte des Bar, in the far south of Champagne, sits closer to Chablis than to Épernay and shares the same seam of Kimmeridgian marl. Bertrand Gautherot farms here at Buxières-sur-Arce, and Fidèle is his benchmark cuvée. The Fonnet vineyard, set in a small enclosed valley, forms the heart of the blend; Sorbée provides much of the balance, topped up by Châtel, a rocky, limestone-rich site with Pinot Noir vines of more than twenty years. Vine age across the cuvée averages around thirty years, and roughly five per cent is reserve wine from a perpetual blend begun in 2001 and held in two large old foudres. The fruit is pressed in a traditional vertical Coquard press, then fermented without added yeast and without chaptalisation in used Burgundy barrels from Domaine Arnaud Ente in Meursault for ten months. After the second fermentation the wine spends fifteen to twenty months on lees in bottle and is disgorged without dosage.
Drinking well on release and with the structure to hold for several years in a cool cellar. Serve at 8°C with freshly shucked oysters, roast chicken or a plate of charcuterie.
