Charles Melton Cabernet Sauvignon is a single-variety Barossa Cabernet from the estate's Krondorf vineyard, offered here with considerable bottle age.
Charles Melton is a family winery on Krondorf Road in the Barossa Valley, founded in 1984 by Graeme 'Charlie' Melton and run with his wife Virginia. Cabernet Sauvignon has a long history in the Barossa and does well on the slopes around Krondorf, south of Tanunda, where red-brown soils over clay hold moisture through the warm growing season. The estate makes its Cabernet entirely from Cabernet Sauvignon, allowing the variety's firm tannin and dark fruit to speak clearly, and matures it in oak barrels before bottling under screwcap. This release has been cellared for an extended period, so the primary fruit has given way to the savoury, earthy complexity and softened tannins that well-structured Barossa Cabernet develops with age.
A mature, full-bodied red for slow-roasted lamb, beef Wellington or aged cheddar; serve at around 17 to 18 degrees.
