Chartogne-Taillet Les Couarres is a single-vineyard Champagne from a gently sloping, south-facing site of tuffeau and clay at Merfy.

Merfy lies north-west of Reims, outside the classic heartland, and its tuffeau and clay soils give Champagne of rounder texture than the chalk of the Côte des Blancs. Les Couarres is one of Alexandre Chartogne's single-vineyard bottlings, from just under four hectares of Pinot Noir and Chardonnay on a gentle south-facing slope, with the oldest vines now well over fifty years. The blend is sixty per cent Chardonnay to forty per cent Pinot Noir. Chartogne calls the wines from this site the laziest, meaning they ask for very little in the cellar; his response is to protect the wine from oxygen from the moment of pressing and right through its maturation in used barriques and concrete eggs. The wine is known for a round texture held in place by fresh acidity, and for ageing well. Dosage is 2.5 grams per litre.

Approachable now and good for years yet, it suits roast chicken, grilled fish or a mild washed-rind cheese. Serve at 8°C.
