Description
Château Ausone 1er Cru Grand Classé is one of the smallest and most sought-after estates in Saint-Émilion, set on the limestone escarpment at the edge of the town.
The property takes its name from Ausonius, the fourth century Roman poet and consul who is said to have kept a villa somewhere in the district. The vineyard is tiny by Bordeaux standards, planted in roughly equal parts Cabernet Franc and Merlot on the côte and the plateau above, where the topsoil is thin and the roots work directly into hard limestone. The cellars are cut into that same rock beneath the vines. The Vauthier family has been associated with the estate for many generations and keeps production deliberately small, which is part of the reason bottles are so scarce and so keenly sought.
A wine for long cellaring rather than early drinking, and one to decant; serve with simply roasted lamb or beef.
