Château Ausone 1er Grand Cru Classé 2021

Château Ausone 1er Grand Cru Classé sits on the limestone bluff just below the town of Saint-Émilion and is among the rarest wines in Bordeaux.

Named after the Roman poet Ausonius, the estate occupies a south and south-east facing amphitheatre of terraced vineyard on the côte, with a further parcel on the plateau above. The soils are shallow clay over solid limestone, and the barrel cellars run into caves quarried out of the rock. Cabernet Franc plays an unusually large part in the blend, alongside Merlot, and the vineyard is worked parcel by parcel with the whole crop picked by hand. Annual production is measured in a few thousand cases at most, making this the smallest of the leading Right Bank estates, and every bottle is spoken for long before it is released.

Best given many years in a cool cellar and a long decant; plain roast meats or game are the safest company.
