Chapelle d'Ausone is the second wine of Château Ausone, made from the same limestone amphitheatre on the côte at Saint-Émilion.
Ausone occupies a small, very steep site on the southern edge of the Saint-Émilion plateau, where a thin covering of clay lies over solid limestone and the vines look down the Dordogne valley. The estate is tiny by Bordeaux standards, a little over seven hectares, and has been directed by the Vauthier family since the 1990s. Chapelle d'Ausone is drawn from parcels judged not to be needed for the grand vin along with plots on the plateau above the côte, and it is vinified in the same cellars cut into the rock beneath the château. Cabernet Franc and Merlot share the blend in roughly equal measure, and the wine is raised in barrel for a shorter time and with less new oak than its senior.
Fine-boned and more open in youth than the grand vin, it suits roast lamb, veal and mushroom dishes; decant and serve at around 17 degrees.
