Description
Château Canon, 1er Grand Cru Classé sits on the limestone plateau just west of the walls of Saint-Émilion, on one of the most favoured sites in the appellation.
The name comes from Jacques Kanon, a privateer who owned the property in the eighteenth century. The vineyard is a walled block on the plateau, its thin topsoil resting on the fissured limestone the town itself is built from, with old quarries running beneath the vines that now serve as cellars. Merlot dominates the planting, with Cabernet Franc. Since the Wertheimer family of Chanel bought the estate in 1996 there has been a long and expensive restoration, including the replanting of affected parcels and a rebuilding of the cellars, and the wine has returned firmly to the front rank of Saint-Émilion.
Serve with roast lamb, beef or game, and decant young bottles; this is a wine built to age, and it rewards patience in a cool cellar.
