Description
Château Canon, 1er Grand Cru Classé is a Saint-Émilion from a walled vineyard on the limestone plateau just west of the village.
Canon's vineyard is a clos, enclosed by its own wall and sitting on the asteriated limestone that gives the plateau its backbone; beneath it run the quarries from which the town of Saint-Émilion was built, now used as cellars. The estate was bought in 1996 by the Wertheimer family, owners of Chanel, who also hold Rauzan-Ségla in Margaux, and the two decades that followed were spent replanting the vineyard and rebuilding the cellars. Merlot leads the blend with Cabernet Franc alongside it, and the property was enlarged by the addition of neighbouring vineyard land. It is classified Premier Grand Cru Classé in Saint-Émilion.
Decant an hour ahead and serve at around 17 degrees with lamb, beef or duck; give it a decade and it will hold for a good deal longer.
