Château Climens, 1er G.C.C, 1855 Barsac 375mL 2010

Château Climens, 1er G.C.C, 1855 Barsac is a Premier Cru Classé of Barsac made entirely from Sémillon, and long treated as the benchmark for its commune.

Barsac lies inside the wider Sauternes zone yet keeps its own appellation, and its limestone plateau under a thin covering of red sand gives sweet wines of finer frame than the deep gravels further south. Climens farms a single block of vines around the château on that plateau, planted solely to Sémillon, which is unusual even here. Harvest runs as a series of passes, the pickers returning again and again to take only berries touched by botrytis cinerea, the noble rot that shrivels the fruit and concentrates what is left inside it. Fermentation and ageing then take place in barrel. The estate has been farmed biodynamically for well over a decade and holds Demeter certification.

It is a natural partner for foie gras, blue cheese or a simple fruit tart, and should be served well chilled. Sensible sizes for a wine poured in small measures.
