Description
Château Climens is a legendary Barsac sweet white, made entirely from Semillon.
Long regarded as the leading estate of Barsac, the village within the Sauternes region whose limestone plateau gives its wines a particular freshness, the property farms vines on one of the higher points of the appellation, on red sandy and gravel soils over fissured limestone, and Semillon is the only grape used. Harvest is by hand in several passes through the vines, picking only grapes touched by noble rot, and the wine is fermented and aged in oak barrels. For around three decades the estate was run by Bérénice Lurton, who later moved it to biodynamic farming. 2005 is a celebrated year for Bordeaux's sweet wines, and with age this bottle has taken on old gold tones and notes of dried flowers and autumn sun.
Serve lightly chilled, around 10 to 12 degrees, so the complexity of a mature Barsac can show. Foie gras, Roquefort or a tarte tatin are traditional partners, though it's also lovely on its own at the end of a meal. Now at a beautiful stage of maturity, it will hold for many years yet.
