Château Climens 1er Grand Cru Classé en 1855 Barsac 2011

Château Climens is a Premier Cru Barsac, a noble rot wine known for its purity and fine acidity.

Classed as a First Growth in 1855, the estate farms a compact vineyard on the Barsac plateau, where a thin layer of red sand and gravel covers limestone bedrock. That limestone is the source of the lively, almost mineral freshness that sets the best Barsacs apart. Semillon is the only grape planted, picked by hand over several selective passes so that only botrytised berries reach the press, then fermented in barrel. The 2011 season began with a hot, dry spring and early growth; a cooler, wetter summer followed, and a warm, stormy spell at the end of August brought an early onset of botrytis. Picking began in early September in ideal conditions, giving a generous and well-balanced harvest.

Chill to around 10 degrees and pour in small glasses. It pairs with pan-seared foie gras, washed-rind or blue cheeses, and fruit desserts built on apricot or peach. Great Barsac lives for decades, so this can be enjoyed now or cellared with confidence.
