Château Climens 2007

Château Climens is a sweet white from Barsac, made entirely from Sémillon at a property long known as the lord of that commune.

Barsac is one of the five communes entitled to the Sauternes appellation and may also use its own name on the label. Its ground is flatter than Sauternes proper and its soils are red sand and clay over limestone bedrock rather than gravel, a difference often held to account for the character of its wines. Climens was classified a Premier Cru in 1855 and is unusual in being planted solely to Sémillon. The grapes are picked in successive passes by hand as botrytis develops, and each parcel is fermented and matured separately in barrel before the final blend is assembled, with a substantial share of the crop set aside in most years.

Serve well chilled with foie gras, blue cheese or a fruit tart, or on its own after a meal; the wine will keep for decades.
