Description
Les Dames de Bonneau is Château Closiot's selection cuvée, made only in years when the botrytis is clean enough, in a 375ml bottle.
Barsac is the northern of the two communes entitled to the Sauternes name, distinguished by a flat limestone plateau rather than the slopes further south. Closiot covers eight hectares, which makes it one of the smallest properties in the commune — Climens has 30 and Coutet 18 — and its vines lie on the Clos Bonneau, where red earth scattered with pebbles rests on that limestone base. The soils stay relatively cool, which gives Jean-Marie Guffens' wines a mineral steeliness to offset the late-picked fruit. The clos is planted almost entirely to Sémillon, with Sauvignon Gris, Muscadelle and Sauvignon Blanc alongside, and includes four hectares of century-old vines. This cuvée is harvested at the very start of November by a severe selection, pressed in a traditional vertical press and aged eighteen months in oak.
It will keep for decades; serve well chilled at 8–10°C with blue cheese, foie gras or a simple fruit tart.
