Chateau de Pibarnon Bandol Rosé 1.5L MAGNUM 2021

Château de Pibarnon's Bandol rosé is a sixty-forty blend of Mourvèdre and Cinsault from the highest vineyard in the appellation, bottled here in magnum.

Bandol rosé is built on Mourvèdre and made to be drunk at table rather than as an aperitif. Pibarnon's terraces climb an amphitheatre on the Colline du Télégraphe at around three hundred metres above the Baie de Bandol, high enough for cool nights and open to the moderating sea breeze. The soils are unusual: les marnes bleues, a chalky blue-tinted clay rich in microfossils, also found in the Jura and Pomerol and valued for its low pH and its ability to hold water. The Cinsault is pressed directly to tank and brings perfume and balance; the Mourvèdre is bled off saignée-style after several hours on skins, adding structure and depth. The blend is assembled before a wild-yeast fermentation and raised in tank for six months. The estate is farmed organically.

Drink over the next two to three years, since this has the substance to develop. Serve at 10-12°C with bouillabaisse, grilled prawns or roast chicken with garlic.
