Description
Chateau De Pibarnon Marc is a grape spirit distilled from pressed Bandol Mourvèdre and matured for twenty years in old Armagnac casks.
Marc is the pomace brandy that French wine estates have long distilled from the skins and pips left after pressing, and at Château de Pibarnon, high above the Baie de Bandol, Éric de Saint-Victor keeps up the family practice of making one in suitable years. The distillation follows the méthode bourguignonne in a small wood-fired copper still, with only the heart of the run collected; each pass yields about 25 litres of spirit. It is then aged for twenty years in old 418-litre Armagnac casks made from Gascon Chêne Rouvre oak, which softens the spirit and draws out dried-fruit and spice character, before bottling unfiltered. The bottle is 700ml and is supplied individually packaged in a wooden box.
Ready to drink and stable indefinitely once opened. Serve at room temperature in a small glass after dinner, with dark chocolate, walnuts or a hard aged cheese.
