Description
Château du Pavillon Sainte-Croix-du-Mont is a sweet white Bordeaux from the right bank of the Garonne, directly across the river from Sauternes.
Sainte-Croix-du-Mont is a small appellation on a steep bank facing Sauternes and Barsac, making the same style of wine from the same varieties, chiefly Sémillon with Sauvignon Blanc. Its most remarkable feature is geological: the hillside rests on a bed of fossilised oyster shells several metres thick, laid down when this was a warm shallow sea, and cellars have been cut straight into it. The autumn mists that bring botrytis cinerea to the famous communes opposite reach here too, so the grapes are left to shrivel on the vine and gathered in successive passes. The wines are made in far smaller volumes and have never carried the same prices.
It partners blue cheese, foie gras or a fruit tart, and should be served well chilled.
