Description
Château d’Yquem 1er Grand Cru Classé Supérieur en 1855 is the most celebrated sweet wine of Sauternes, offered here in a half bottle.
Sitting on the highest hill in Sauternes, the estate was the only property awarded Premier Cru Supérieur rank in the 1855 classification. Around 100 hectares of Sémillon and Sauvignon Blanc are in production on gravel and clay soils, and autumn mists from the Ciron river encourage the noble rot that concentrates the grapes. Pickers pass through the vineyard several times, taking only botrytised berries, and the yield is famously close to one glass of wine per vine. The wine is fermented and matured in new French oak barrels. The 2010 season was cool, with a warm, dry summer and ideal harvest weather, and the château kept only its best parcels after strict sorting and selection at blending.
Chill to around 9 to 11 degrees and pour small glasses. Classic partners are foie gras, Roquefort and other blue cheeses, roast poultry, or fruit tarts that are not too sweet. A half bottle is a handy size for the end of a dinner for four, and wine of this calibre will keep developing in the cellar for decades.
