Château d’Yquem 1er Grand Cru Classé Supérieur en 1855 is a half bottle of Sauternes from the appellation's most famous estate, made from Sémillon and Sauvignon Blanc touched by noble rot.

The property sits at the top of the Sauternes plateau, with around 100 hectares of vines in production and a history as a wine estate that runs back several hundred years. Morning mists followed by sunny afternoons allow botrytis to shrivel the grapes and concentrate their sugar and acidity. Picking is done by hand over many weeks, with pickers selecting individual berries on each pass, and yields are tiny by any standard. New French oak barrels are used for both fermentation and maturation. Of 2023 the team at Yquem speaks of a dream year and a magnificent, perfectly balanced wine, the sort of result that only comes when conditions line up just right.

A 375ml bottle gives four to six small pours, enough to finish a meal in style. Serve cool, about 10 degrees, with blue cheese, pâté, crème brûlée or poached stone fruit. There is no hurry to open it, as the best vintages hold and improve for generations.
